President’s Message March 2010


Greetings Chefs and Fellow Culinarians,

The normal Florida warm weather is finally here! I personally enjoy the cold weather but wondered when it would warm up again. The freeze snaps that we've had the past two months did its share of damage to the local crops. We can now look forward to all the Spring Season products such as artichokes, asparagus, morel mushrooms, fava beans, lamb and so on.

First, I want to take this opportunity to congratulate Chef Louis Perrotte CEC, AAC. He was named the Continental Director for the Americas for WACS (World Association of Chefs Societies). Chef Perrotte has been a longtime member of ACF Central Florida Chapter, a former Southeast Region Vice President and former owner of the renowned Le Coq Au Vin Restaurant here in Orlando.

Congratulations also to Brian Moll, line cook at Isleworth Golf and Country Club for earning a Bronze Medal during the first phase of the U.S. Culinary Olympic trials in Chicago last month. Brian advances to the next phase which is a mystery basket hot food competition taking place next month. Let's wish him the best of luck!

Thank you to Fresh Point Reds Market's team of Barry Resnick, Al Novoa, Bonnie Bisignano, and Dan Snowden for their Specialty Produce and Cheese presentation and to Chef Lauren Cooke, CEPC and her students for hosting our meeting at Mid Florida Tech College.

We have partnered with Ellen Hutter, Publisher of Restaurant Forum Magazine. In each issue of the magazine, there will be space for “ACF Central Florida Chapter Happenings”. With that said, I encourage all of you to submit articles that you have written. Articles can be anything related to food or the culinary field. Examples include cooking techniques & methods, travel experience to a foreign country, food finds, a favorite recipe, etc. Please submitted articles to ngaldiano@bellsouth.net.

The Taste of Compassion charity event will take place on Tuesday, April 20th, at the grounds of First Presbyterian Church in downtown Orlando. There will be 22+ participating chefs and 600+ guests. Proceeds from the event will benefit the ACF Central Florida Chapter Scholarship Fund, Compassion Corner Homeless Assistance and Central Care Mission.

For those of you that will be attending the Southeast Regional Conference, a quick reminder to register by April 8th for the best discount offers. Refer to the National website: www.acfchefs.org for details.

Next month's meeting will feature a friendly student team relay competition sponsored by Bar Harbor Seafood and Boston Lobster Feast. Student teams of five will represent culinary programs from Le Cordon Bleu, Mid Florida Tech, Valencia Community College, Arts Institute of Tampa, and our very own Team ACFCFC. The competition will have three components:

  1. Skills Challenge-fillet a whole fish, shuck 10 oysters, peel & devein 20 shrimp, and remove all meat from a lobster.

  2. Team Challenge-5 trivia questions.

  3. Product identification-teams will have to identify 10 seafood products.


There will be great prizes awarded in addition to “bragging rights”. There will also be a short discussion to help simplify everyone's understanding about Sustainable Seafood.
