| President's Message April 2010 |
Greetings Chefs and Fellow Culinarians,
OMG! All I can say is...what a great turnout we had at our last meeting! The highlight was the Student Seafood Relay Competition. Student teams representing Le Cordon Bleu, Mid Florida Tech, Valencia Community College, and ACFCFC performed various skills: filleted a whole fish, shucked oysters, peeled and deveined shrimp, and removed meat from a 4# lobster. They also had to identify 10 fish species and answer five trivia questions. There was so much excitement that evening! I sensed a little nervousness from some students but yet excited to take on the challenge. Congratulation goes out to Team ACFCFC. Team members are Brian Moll, Wendy Lopez, Mark Harmer and David Santiago. All participants received fabulous prizes. Chef Ron Duprat from Bravo's Top Chef Season 6 made a surprise appearance.
I would like to acknowledge and send a special thank you to Chef Keith Esbin, Corporate Chef and creator of the event, Bar Harbor Seafood and Boston Lobster Feast for hosting and sponsoring. The entire staff did a phenomenal job in organizing the event.
A quick note, that evening, Chef Keith announced a job opening and one lucky student, Christopher Moses from Valencia Community College landed a job on the spot. What a great way to network!
The Eighth Annual Taste of Compassion Street Party took place on April 20th on the grounds of First Presbyterian Church in downtown Orlando. There were 26 booths representing various establishments in Central Florida serving up delicious food to 600+ hungry attendees. Awards were given out in three categories. “Best Decorated Booth” goes to Chef Desmond D' Souza, CEC of The Clay Oven Caters and Lackman Culinary Services, “Best Food” to Chef John Rivers of Four Rivers Smokehouse, and “Friendliest Booth” to Gaylord Palms. Proceeds of the event will benefit the Compassion Corner, Central Care Mission, and the ACFCFC Scholarship Fund.
I want to extend my Wishes and Best of Luck to all the competitors representing ACF Central Florida Chapter at the SE Regional Conference. The competitors are Chef Bernd Mueller, CEC, AAC for Chef Professionalism Award, Chef Andreas Proisl for Pastry Chef of the Year, Chef Ken Bourgoin, CEC for Educator of the Year, and Valencia Community College for the Student Team Regional Championship.
Our next meeting will be on May 24, 2010 starting 6:00 PM at the Citrus Club in downtown Orlando. This will be a special “Wine Education” event in collaboration with the Club Managers Association of America Sunshine Chapter and featuring Master Sommelier Brian Kozol from Consolation Wines. Stay tuned for more details to come. Please note, due to seating and space requirements, your RSVP is a must.
