President's Message June 2010


Greetings Chefs and Fellow Culinarians,

As I’m writing this message while vacationing in rural Vietnam, I am reminded by how fortunate we are to have the luxuries that are available to us in America such as air conditioning, automobiles, various technologies, and decent restroom facilities. Despite the mosquito bites and heat, I’m learning the culture and enjoying all the food that Vietnam has to offer.

I want to thank Mr. Joe Hardiman and the staff of Le Cordon Bleu for hosting this month’s meeting. Chef Russell Scott, CMC, did an overview of the ACF Certification process. Mayda Carone of C&B International Trading Group and George Ortiz presented the production of Iberico Ham and Quail Eggs.

The Wine Education and Networking Event with members of the Club Managers Association of America Sunshine Region took place May 24th at the Citrus Club. It was a great and successful event. 45 ACF members and 20 CMAA attendees learned and blind tasted various wine varietals from the new world. This was the inaugural event in my quest to connect with other professional organizations in the industry here in Central Florida. Future plans include events with NACE (National Association Catering Executives), FLRA (Florida Lodging and Restaurant Association), and CFHLA (Central Florida Hotel and Lodging Association.

Congratulations to Chef Bryan Frick, CEC, AAC, who was one of 50 ACF chefs chosen to go to Washington D.C. on Friday, June 4th to assist with First Lady Michelle Obama’s campaign “Chefs Move to Schools Program”. In his role, Chef Frick will head the initiative to educate elementary and junior high students about proper nutrition, eating the right foods, and staying healthy to prevent obesity here in Central Florida.

Nominations for Chapter Chef of the Year and Award of Culinary Excellence are just around the corner. I highly recommend that you nominate colleagues deserving of these awards. The guidelines are available on our website www.acfcfc.org. Nominations are due by November 1, 2010. The winners will be announced at the President’s Dinner in January 2011.
